Christmas Cheer!
In honor of Christmas, I share this quick goodie/recipe with you.
A Two-ingredient Peanut Butter Cup, served up on my grandmother’s special “Christmas Plate”. :o)

I know! I know! Yes, my calendar DOES read May 27, but my heart longs for some good ol’ Christmas cheer right now!

Apparently, I am not alone in feeling that the world needs a dose of Christmas spirit these days. Recent news articles have focused Christmas lights decorating houses this spring, adding a note of happiness to this unusual (Covid-19) time.

Rather than decorating my own house in Christmas splendor this spring, I, instead, have been putting on a few classic Christmas movies to add to my Christmas joy. (To be honest, it is just an excuse to break out a few of my Christmas favorites, a bit early. :o))

(Two-ingredient) Peanut Butter Cups
This recipe is a recent acquisition to my recipe “box”. My son in-law created this chocolatey recipe! This chocolate treat is sure to be added to my Christmas goodie list this year, as it is easy and yummy, requiring only two ingredients: chocolate chips and peanut butter!

I used a mini-muffin tins for my peanut butter cups. For the peanut butter filling, I used a small scoop (18/10?), that is about one inch across.

Making my first batch of these yummies, I did not have any mini-cupcake liners, which made releasing them from the muffin tins a challenge. I highly recommend using the mini-cupcake liners!
Use mini-cupcake liners when preparing these peanut butter cups.
Recipe
(Two-ingredient) Peanut Butter Cups
Makes about 6
Ingredients
Approx. 1 (heaping cup), Ghirardelli bittersweet chocolate chips, 60% cocoa
(Other varieties may be used, if desired)
Approx. 1/2 cup, Peanut butter
I use natural, and the chunky variety.
(You can make your own peanut butter, here.)
Directions
Place mini-cupcake liners into mini-muffin tins.
Melt chocolate chips in microwave.
( 30 second intervals, stirring after each 30 seconds.)
Place enough melted chocolate on the bottom of the mini-cupcake liner,
to amply cover the bottom.
Place a small scoop of peanut butter in center of the melted chocolate.
Cover the peanut butter with chocolate,
making sure that the peanut butter is completely covered.
Place in refrigerator until set, about an hour.
Remove peanut butter cups from tin.
Enjoy!
