 There are times when life, like this motorbike, seems to run away with us!

Jan is the surprised passenger, in this photo, seated in the back, holding on for dear life!
Thankfully, neither woman was hurt in the making of this hilarious photo. 

Where Life Takes Us…

Don’t you just love this photo? So, so funny!  This wonderful image playfully reminds
me that in life, despite all of our (my) planning, that often times the Good Lord has
other plans. There are times when life seems to run away with us, and while we hold
on for “dear life”, craziness ensues. For me, craziness has indeed ensued, lately! :o)
Nothing bad, mind you, just totally busy! So what does one do under these circumstances?  Go to Disney, of course!

Disney is always a good idea!

A Disney Photo Tour of All Things New (to me)

Throughout my four years as a blogger, Disney trips have found its way into my blog posts on numerous occasions. (See below, for Check out My Other Disney Posts!) In this, my most recent post, I share with you some new fun that I discovered during this past April Walt Disney World visit. I invite you to follow and enjoy my Disney photo tour.

Pimento-Cheese BLT

Thanks to my daughter, who always has her (Mickey Mouse) ear to the ground (Disney ground, that is), I learned of the Pimento-Cheese BLT in Animal Kingdom. This yummy park delicacy is served at The Smiling Crocodile quick service restaurant. I liked it so much that I recreated it!  The recipe is below.

The Rivers of Light Dining Package

Another new WDW experience this visit, again thanks to my Disney-informed daughter, was The Rivers of Light Dining PackageIn addition to enjoying dining with my hubby, our daughter and her husband, and my daughter’s best gal pal, Natasha, (These ladies met while working with the Disney College Program several years ago.), we were celebrating Natasha’s birthday!  The evening began with a wonderful dinner at Tiffins.

A Tiffin (carrier) is a type of lunch box used in South Asia similar to those displayed upon this sign.

At the end of our dining experience, we were presented with this beautiful
Glowing Lotus Blossom Specialty Popcorn Bucket .

The Rivers of Light

The Light Show was a parade of beautiful colors upon the water.
Notice the large lotus blossoms? (These were not filled with popcorn. :o) )

Kilimanjaro Safari

The Kilimanjaro Safari at Animal Kingdom is always a popular attraction with my family, and is my husband’s favorite.  Although our group had all enjoyed this ride many times before, none of us had enjoyed the evening safari. Named Nocturnal Encounters, this unique experience became available just last year.

My Recipe for the Disney-like Pimento-Cheese BLT

Ingredients

PAM spray
Parchment baking paper

Ciabatta Bread, in 3/4 inch slices
(My grocery store offers to slice this for its customers.)
(I have used large french bread in a pinch.)

Pimento Cheese spread
(I found this yummy Palmetto Cheese in my deli.
You can also make it from scratch.  Paula Deen has a recipe here.
I have not tried this recipe.)

2-3 slices Precooked Bacon, , no nitrate variety

Tomato, chopped

Chives, chopped
(I use kitchen scissors for this.)

Directions

Pre-heat oven to 350 degrees.

Place sliced ciabatta bread on Pam-sprayed parchment, place on cookie sheet.
Spray tops lightly with Pam, too.

Toast in oven for about 12-15 minutes, till toasty.

Remove from oven.

Heat precooked bacon in microwave for 10-30 seconds, til warmed and your desired crispness.

Spread toast liberally with Pimento Cheese.

Place 2-3 slices warmed precooked bacon on top of cheese.

Place chopped tomato on top of bacon.

Sprinkle with a few cleaned chopped chives over the top.

Enjoy and dream of Walt Disney World. :o)

Gilding the Lily-Cook your own thicker variety bacon, in place of the precooked.
(I bake mine.)  For the last minute, or so, baste with genuine maple syrup.
