You know those bins of bargain books that pop up at the grocery store every few months?  They draw me in like a super magnet!  One of my recent grocery store finds was the interesting read by Andrew Morton, Meghan: A Hollywood Princess, the 2018 book about the wife of Prince Harry.  One statement in the book shook me to the core,
“As a rule, the royal family eat to live rather than live to eat…” Really?!  Are there actually people out there, like that?!

Needless to say, I do not fall into that “eat to live” category! I, my friend, am a foodie.
I live to EAT! I also enjoy cooking, and finding new, delicious recipes.

Playing with My Food  

Today I have a new recipe to share with you.  It makes for a nice breakfast, or even a light lunch.  For you WW members out there (formally Weight Watchers), this recipe is only 1 point (on the blue plan)!
Read on to yumminess…

I bought myself a new “toy” last week; a $10 Dash Mini Waffle Maker to be exact.
( I purchased mine from Target, but Amazon, Kohl’s, and Bed, Bath and Beyond carry them, as well.)
Why, you say?  “Annette, you are already the proud owner of a most adorable
Mickey Mouse 90th Anniversary Double Flip Waffle Maker (for small waffles) that you spoke of here in an earlier blog post.”

It makes waffles like those at the Disney Parks.

After some research, I found this classic/used Mickey Waffle Iron on eBay.
Note-Read my blog first, here, if you are looking into buying this
type of used waffle iron.
Some have been recalled due to faulty wiring.

Well… I decided that this new mini waffle maker would be great to have on those occasions when I find myself cooking and dining solo.  And beside, it is just so darn cute! :o)

Let the Fun Begin!

Cooking with the Dash Mini Waffle Maker, is reminiscent of cooking with, the also miniature, Easy Bake Oven!  That is, cooking dishes in diminutive form, and playing with one’s food. :o). I actually never owned an Easy Bake Oven myself, but experienced mini-cooking on a friend’s once.

Gather the ingredients for cooking this Mini Egg Waffle.
 I suggest using small eggs, rather than large ones.

Plug in this mini appliance.
The handy dandy light will come on, and when the waffle surface is hot,
the light will go off.

Spray the waffle surfaces with non-stick cooking spray.

Whisk egg, and carefully pour onto hot surface.
To the whisked egg (now in the mini waffle maker) evenly add cheese,
chopped scallions and red bell pepper, cut pieces of cooked bacon, salt, and pepper.
(I heat my pre-cooked bacon in the microwave for 30 seconds before cutting into pieces)

Close cover and cook until done.
(The light will go out when done.)

Recipe

Mini Egg Waffles

INGREDIENTS:

PAM non-stick cooking spray

1 small egg

1 Tablespoon 2% milk, reduced-fat, sharp cheddar cheese, shredded

1/2 Tablespoon scallions/green onions

1/2 Tablespoon chopped red bell pepper

1 slice pre-cooked bacon, cut in pieces
(I prefer the uncured, no nitrate variety)
(I heat my pre-cooked bacon in the microwave for 30 seconds before cutting into pieces)

salt and pepper

DIRECTIONS:

Preheat waffle maker.

When waffle maker is hot, apply nonstick cooking spray.

Whisk eggs and carefully pour into heated waffle maker.

Evenly sprinkle cheese over the eggs.

Add chopped scallions, red bell pepper, and bacon to the waffle.

Sprinkle with salt and pepper.

Cook until done.

Makes: 1 mini egg waffle.

WW points (formally Weight Watchers):  only 1 point (on the blue plan)!

Annette’s Notes-Although, I have not tested this, I am guessing that a few of these could be made in advance, and kept in the refrigerator for the next day, or two, to be reheatedin the microwave.

    What a joy to read your fun blog! I loved making mini waffles! I took one banana, 2 eggs and a dash of cinnamon. These were for my grand children. They loved it!!!!
