Key Lime Pie,
a New Halloween Tradition
I am ready to devour my slice of Key Lime Pie!
Halloween was a success at my house this year!
The day’s sun was fading, while the entertaining The Canterville Ghost played on my television, winding down the last of this year’s viewings from my Halloween movies/TV list. (You can see that Halloween movie/tv list, here.)
Occasionally, a knock summoned me to the front door, where cutely costumed
trick-or-treaters presented their opened bags for my candy contribution. Appropriately clad in my Samantha/Bewitched tee, I added m & m’s to their bounty, with one eager trick-or-treater ironically dressed as a blue m & m!
It was also on this day that I began a new Halloween tradition at my house; eating
key lime pie!

Regular followers to I’m Annette have heard me extoll the virtues of clam chowder, stating “I never met a clam chowder that I didn’t like.” The same can be said of my fondness for key lime pie. “I never met a key lime pie that I didn’t like.”

I have enjoyed many key lime pies over the years. (I believe that I tasted my first ever in a small restaurant in Key West, Florida, in the late 1970’s.) One of the best key lime pies hails from Publix grocery store, a Southeastern grocery store chain. Living in Maryland,
with no Publix in sight, I am unable to purchase one of these gastronomic gems. So,
I wrote to Publix, requesting the recipe.
Unfortunately, Publix does not share the recipe for their prize winning pie, but with a little sleuthing, I believe that I have come up with a close knock-off. (I even found something online by someone claiming to have once worked at a Publix, revealing the ingredients.)

I share with you my Publix Knock-off Key Lime Pie recipe. Beware! This recipe is quite simple to put together (no baking required), but one bite can prove quite addicting! :o)
Making Publix Knock-off Key Lime Pie
Only a few ingredients are needed for this delicious Publix Knock-off Key Lime Pie.
It can be made with, or without, the whipping cream.

Publix Knock-off Key Lime Pie
Graham Cracker Crust
6 Tablespoons melted butter
(scant/a little less) 1/4 cup sugar
1+1/2 cups graham cracker crumbs
(freshly crushed from graham crackers are best)
Key Lime Pie Filling
2 (14 ounce) cans Sweetened Condensed Milk
(I used Borden’s Eagle Brand)
1/2 cup + 1-2 Tablespoons Key Lime Juice
(I used Nellie & Joe Famous Key West Lime Juice)
Whipped cream-optional, but suggested
(I used aerosol whipped cream, but it does not hold up long.
I found this recipe for stabilized whipped cream here, but have not yet tried it.)
Sliced toasted almonds-optional
(I use this recipe to toast almonds, here.)
1 fresh lime-optional
Mix together melted butter and sugar,
and then add graham cracker crumbs until well-blended.
Press into pie pan, around the sides and the bottom.
Mix together the two cans of sweetened condensed milk and key lime juice.
Pour filling into pie crust.
Let sit in fridge for at least an hour, or until set.
Add/pipe whipped cream around the edge of the pie, if desired.
Garnish with toasted sliced almonds on top of the whipped cream, if desired.
Garnish with lime slice, if desired.
Keep pie in the refrigerator.
Annette’s notes-If you choose not to decorate the rim of the pie with whipped cream and toasted almonds, I do suggest serving pie slice with a dollop of whipped cream.
Publix states that the toasted almonds are the “standout” ingredient to their
Key Lime Pie. You can see their article about it, here.
The almonds add a nice contrast to the tart pie filling.
I often make a half of this easy Key Lime”Pie” in a 8 x 6.5 rectangle dish.

I use this 8 x 6.5 dish when making half of the Key Lime Pie recipe.
I suggest serving pie slices with a dollop of whipped cream.
