I am excited to be conducting my first ever I’m Annette blog give-away!

I am a non-profit, hobby blogger. In other words, I blog just for the fun of it. That is not to say that there are not rewards.  Over my 5+ years of blogging, I have “met” some very interesting people online, and even gained a fun-loving English pen pal, Jenny, through my guest blog post from earlier this year.

Cowboy Day Cookin’

Recently, I was invited by Greg to join in on  Recipes4Rebels’ third annual
Cowboy Cook-along. ( Who knew that the fourth Saturday in July is Cowboy Day?!)
The rules are simple-cook up some cowboy grub, take a photo, and post it.
(If you would still like to participate, go here, cook something up and post it, as directed,
by this Friday, August 4.)

My cowboy of choice is John Wayne, although admittedly, it is not his cowboy roles that made me a fan. I enjoy Wayne’s more light-hearted movie fare, and one of my favorites is McLintock!

McLintock! is one of my favorite John Wayne movies.

I like McLintock! so much that my sister and mother bought an antique weathervane for me many years ago. I love it, and it reminds me of the opening scene in the movie McLintock. :o)

Cowboy Cookin’, John Wayne Style

My recipe for John Wayne Chicken Nachos, was my addition to this year’s Recipes4Rebels Cowboy Cook-along.  I used a recipe from The Official John Wayne Way to Grill cookbook,  as inspiration, but me being me, I have changed the recipe to my liking.  I share my nacho recipe with you at the bottom of this post.

John Wayne cookbook.  Yes, ok, I did look at the John Wayne photos in this book.  Who wouldn’t?  Yes, I peeked at the yummy looking recipes inside, and yes, I used the recipe for the Grilled Chicken Nachos (on pages 20-21) as the springboard for my own John Wayne Nacho creation.

  2. Write one sentence about why you like this cowboy/cowgirl.
  3. Do this by Thursday, August 15.
  4. Names of. those who commented will be placed into a (cowboy)hat.  The winner will be drawn from a hat. The winner will be contacted via email by August 22, and will be announced in my next blog post.
    A photo of the winner with the cookbook is requested to be emailed to me to be used in a future blog.

The Recipe

Nachos are always a hit, and can easily be tweaked using the ingredients that you want and/or the ingredients that you have on hand.

 

John Wayne Chicken Nachos

Ingredients
 
Multi-grain Tortilla Chips
 
Chicken
 (I used drained can chicken, as that is all I had today.  Grilled would be better.)
 
Cheese (Cheddar or Mexican), shredded
 
Taco seasoning mix
 
Tomato, chopped
 
Onion, chopped
 
Black olives, sliced
(note the photo with only half the nachos with olives,
for those individuals in my house who are anti-olive!)
 
Light Sour Cream
 
Guacamole
 
Directions
 
Preheat oven to 350 degrees.
(A microwave works, too.
On microwave safe plate, cook on high for 30-40 seconds, or so, until
cheese is melted.)
 
Spread tortilla chips on oven-friendly plater, or baking dish.
 
Combine chicken, cheese, and taco seasoning; 
spoon evenly over chips.
Top with with tomatoes, onions, and olives.
Sprinkle more cheese on the nachos.
 
Place in oven for 5 minutes, or until cheese is melted.
 
Top with Sour Cream and Guacamole.

    Loved the posting! Your nachos look delicious! Love the John Wayne tie-in (I had no idea you were a fan…I was expecting a Disney Frontierland recipe from YOUR kitchen)…and your book give-away is so much fun!

    I’ll start (even though I’m out of the country…but maybe I’ll be in the running to win that “special recipe).

    My favorite film cowboy is James Dean as Jett Rink in GIANT (1955). (No surprise there, huh?) Because it’s so much fun to see the underdog triumph (and we all probably consider ourselves the underdog in one aspect or another).
